Vegan Omelet Spanish style using chickpea flour? Is this even possible? Yes, it is! I am absolutely IN LOVE with this recipe, it is extremely versatile and highly nutritious due to all that lean clean protein chickpeas have!

Enough chitchat! Here is the recipe!

VEGAN CHICKPEA FLOUR OMELETTE!

• 1/cup of chickpea flour
• 1 cup of water
• 1/2 cup of red peppers
• 1/2 cup of onions
• 1/3 cup of frozen peas
• 2 cloves of garlic, minced
• 1 cup of spinach
• 1 TBSP of fresh parsley
• 1 tsp of oregano
• 1 tsp of salt
• 1/ tsp of black pepper
• 1 tsp of sweet paprika
• 1/2 Tsp of baking soda
• 2 tablespoons of vegan butter

Instructions

  • 1.
    Boil the potatoes until cooked but firm, let them cool completely
  • 2.
    In medium heat, add 1 tablespoon of the butter and saute the onions and red peppers to a skillet, cook until soft
  • 3.
    Add the garlic and saute for 40-50 seconds more
  • 4.
    Mix all the dry ingredients to a bowl, mix well
  • 5.
    Add the water, mix it well
  • 6.
    Add lemon juice, mix
  • 7.
    Add the potatoes, mix carefully so they don't break
  • 8.
    In a frying pan, add 1 tbsp of vegan butter, heat then add the mixture
  • 9.
    Cook it medium-low heat for 5 to 6 minutes each side, add more butter if needed
  • 10.
    Cannot be frozen.
