Low-carb gluten-free one-sheet!

Delicious nutrition and a super protein dish, all in one, with loadsa veggies, packed with taste and with a beautiful texture, low-carb, and easy to make? Ok, I'm sold...

Enough chitchat! Here is the recipe!


• 1 zucchini
• 2 onions
• 1 red bell pepper
• 1 block of extra-firm tofu
• 2 medium potatoes
• 2 tablespoons of creole spice mix
• Salt to taste
• Black pepper to taste
• 1 teaspoon dried oregano
• Olive oil to taste

    Chop all the vegetables and tofu to your desired thickness and add them to a baking sheet.
  • 2.
    Mix all the spices together, sprinkle on top of the veggies and tofu, add the olive oil, and mix all together until everything is coated with the spices and olive oil
  • 3.
    Put the baking sheet in the preheated oven at 185C 328F for about 45 minutes
  • 4.
    Passed 20 minutes, remove the baking sheet from the oven, and with the help of two spoons, mix the veggies again so they roast evenly and put the baking sheet back in the oven for 25 minutes more.

    Serve it with yogurt sauce or tartar sauce or on its own!
