VEGAN FETA CHEESE!

Really tasty.

After my aunt's ricotta, here I come with another vegan cheese idea and this time is my version of feta cheese, and for this recipe you use plain tofu or even better, you can use the ricotta cheese we’ve made last week! Hope you guys enjoy it :) Cheers!

Enough chitchat! Here is the recipe!

VEGAN FETA CHEESE!

• FOR THE SIMMERING BROTH:
• 1/2 block of medium-firm tofu
• 2 to 3 tablespoons of salt
• 1 or more garlic cloves
• 1 teaspoon of white pepper
• 1 cube of fermented soybean curd
• 3 cups of water
• FOR THE MARINATE BRINE:
• 1/2 teaspoon dry oregano
• 1/2 teaspoon dry parsley
• 1/2 teaspoon dry thyme
• 1 teaspoon pink peppercorns
• 1 tablespoon of lemon (optional)
• 1 teaspoon of white pepper

Instructions

  • 1.
    Wash and cut the tofu into 1-centimeter cubes, add to the water with the simmering brine ingredients and simmer for 5 to 6 minutes on medium-low heat
  • 2.
    Transfer the content to a sterilized glass jar and let it cool down.
  • 3.
    Once it reaches room temperature, add the tofeta to the fridge, shake the jar once in a while to make sure the flavors are incorporating.
  • 4.
    NOTE: You can add ANY KIND OF FLAVORS of your preference to this recipe, just pick the herbs and spices you like the most and make your own "tofeta" blend!
