CHEESY BREAD AND TOMATO SOUP.

One pot (ish)!

Imagine that you can have the freshness from summer days and the groundbreaking richness from the winter nights, all reunited in one single dish, that is comforting, easygoing and classy? Well, then you gotta tray making my cheesy bread tomato soup, I promise you will not regret one single bit and the only problem is that this can get you totally hooked!

Enough chitchat! Here is the recipe!

CHEESY BREAD AND TOMATO SOUP.

• 2 cans of a good quality Italian canned tomatoes
• 750 ml of veggie broth
• 1 medium onion, diced
• 2 garlic cloves, minced or 1/4 teaspoon of garlic powder
• Salt to taste
• Black pepper to taste
• Dried oregano or dried time to taste
• 1/4 cup of cashew cream, unsweetened or the same amount of plant-based milk also unsweetened
• 4 to 5 cups of diced steel bread
• 1/4cup of olive oil
• 1 teaspoon of garlic powder
• Quarter cup of vegan Parmesan cheese
• One cup of meltable vegan cheese

Instructions

    Add olive oil to a thick bottom pot
  • 2.
    And over medium heat add the diced onions. Stir the onions until they are golden then add the garlic and stir for 40 seconds more.

    Add the tomatoes, then add the salt, black pepper and oregano and the veggie broth, lower the heat over the pot and allow it to cook for about 20 minutes
  • 4.
    Meanwhile, we’re going to prepare the cheesy bread:

    Add the cubed cheese to a large bowl, then add black pepper, garlic powder, the Parmesan cheese tossed around a little bit add the olive oil, then with the tape of your fingers mix it around delicately
  • 6.
    Add the bread to a skillet in medium heat toss them around until they are golden brown or you can use the oven or your air fryer if you own one
  • 7.
    When the bread is ready, remove it from the heat and set aside
  • 8.
    Now you’re going to blend the soup by using a blender or a hand mixer
  • 9.
    Add the vegan cream or milk, check for the salt and toss the garlic bread over of the soup, and over the bread add the vegan cheese
  • 10.
    Close the pot and allow the cheese to melt. You can also do the step in the oven. This way you will get a golden brown melted cheese just put it under the broiler for about five minutes or until the cheese has turned golden on the surface.

    Now you can add some fresh herbs such as basil over the melted cheese, serve it and enjoy!
