CREAMY YOGURT AND CUCUMBER SOUP.

• 1 English cucumber, diced
• 1 cup vegan Greek yogurt or more
• 2-3 tablespoons fresh lemon juice
• 1 garlic clove
• 1/2 sweet onion, diced
• 1 teaspoon dried dill or 1 tablespoon fresh dill
• 2 tablespoons finely chopped mint
• 2 tablespoons fresh parsley
• Salt and black pepper, to taste
• Olive oil for garnishing, optional

Instructions

    Add all the ingredients in a blender and blend until smooth

    Put it in the fridge for a minimum of 3 hours before serving
