I HAVE MADE A TEMPEH BURGER!

And it was superb!

I know, I know. You have tried tempeh before but it's just not your cup of tea. I get it, tempeh is today what tofu used to be in the past. A bit too challenging but if treated the right way it can turn into a superstar ingredient and that's exactly what I have done on this burger recipe. So follow it and I promise you, you will change the way you see tempeh forever and it will become a must in your kitchen!

Enough chitchat! Here is the recipe!

I HAVE MADE A TEMPEH BURGER!

• 1 large potato - peeled, diced then pureed
• 1 cup of tempeh (200 g), minced
• 1 cup of cabbage (200 g), minced
• 1/3 cup (or more) of oatmeal flour
• 1/4 cup of pecans, finely chopped
• 4 tablespoons of soy sauce)
• 1 teaspoon of molasses
• 1 teaspoon of Worcestershire sauce
• 2 tablespoons of nutritional yeast
• 1/2 teaspoon of onion powder
• 1/2 teaspoon of garlic powder
• 1 teaspoon of sweet or hot paprika
• 1/4 teaspoon of powdered smoke or liquid smoke - or smoked paprika
• 1 teaspoon baking powder
• 1 1/2 teaspoon of grill seasoning
• Salt to taste
• Pepper to taste
• A few drops of lemon
• Oil for frying

Instructions

  • 1.
    Add oil to a skillet, when hot, add the cabbage. Sauté in medium heat until golden brown. This might take some time (about 10 minutes) but it will be totally worth it.
  • 2.
    On a separate skillet, add oil, when hot, add the tempeh, then add the soy sauce, Worcestershire sauce, and the molasses, sauté for about 4 minutes or until the liquids have evaporated.
  • 3.
    When the sautéed ingredients have reached room temperature, add them to a bowl along with the remainder of the ingredients, except for the oil. Mix well until everything is incorporated.
  • 4.
    Cover the mixture with a paper towel and put it in the fridge for 30 minutes or in the freezer for 15 minutes. This will help the patties to get a super crispy crust.
  • 5.
    Remove the bowl from the fridge, and with either damp or oiled hands, make the desired shape patties. Place them on a non-stick silicone baking sheet.
  • 6.
    Add oil to a skillet, when hot, add the patties. Do not overcrowd the skillet otherwise, the patties will fall apart.
  • 7.
    Assemble your burgers using your favorite dressings, vegetables, and cheeses, and enjoy!

    1. The amount of oatmeal flor will vary, so add more or less to your mixture, since it is supposed to be firm, holding together, and yet moist.

    2. If you don't have liquid smoke or powdered smoke, add smoked paprika and eliminate the sweet or hot paprika in the recipe.
