CAULIFLOWER STEAK, PURÉE & GREEN PESTO!

• FOR THE CAULIFLOWER STEAK:
• 2 cauliflower steaks
• 1 teaspoon of paprika
• 1/2 teaspoon of turmeric powder
• salt to taste
• pepper to taste
• 1/2 teaspoon of garlic powder
• olive oil
• vegan butter
• FOR THE CAULIFLOWER PURE:
• olive oil
• 1 small onion, chopped
• 2 cloves of garlic
• the remainder florets from the cauliflower
• water
• salt to taste
• pepper to taste
• 1 teaspoon of white miso paste
• 1 teaspoon vegetable bouillon
• 1 tablespoon nutritional yeast
• FOR THE CAULIFLOWER PESTO:
• the cauliflower leaves
• 1 tablespoon of pine nuts or walnuts
• salt to taste
• pepper to taste
• 1/4 teaspoon of garlic powder
• olive oil

Instructions

    CAULIFLOWER STEAKS

    Rub all the ingredients on both sides of the cauli steaks, add the vegan butter and put it in the oven for 20 minutes at 200℃, 390℉.

    CAULIFLOWER PURE:

    Add oil to a pot, add the onions and garlic, saute for 4 minutes, add the remainder of the ingredients, cook until the cauliflower is soft, pure it. Reserve.
  • 5.
    CAULIFLOWER PESTO:
  • 6.
    Add the cauli leaves to a pot with boiling water, let them cook for 2 minutes, remove the leaves from the hot water, place them in an ice bath for 2 minutes, remove the leaves from the ice bath, add them to a blender with the remainder of the ingredients, blend until smooth.
  • 7.
    Make the plates using the pure, the steak and drizzle some of the pesto around the steak and enjoy it!
