Add the raw chickpeas to a bowl, cover it with water and let them soak overnight or for at least 8 hours.
After this time, drain the chickpeas, add them to a blender along with the water and blend until smooth.
Transfer the blended chickpeas to a bowl, add the salt, pepper, garlic powder, the veggies, and the sour starch, mix to combine.
Add oil to a skillet, on medium heat; when hot, add two or three spoons of the omelet, let it cook for about 5 minutes on each side.
Serve it with. Side of guacamole or avocados or your favorite salsa and enjoy!
