Vegan Japanese curry Udon that everybody loves!

• 1 package of frozen udon noodles (200g)
• 1/3 cup vegan chicken or duck meat (or fried tofu or seitan)
• 1/3 cup onion
• 1 cup mushrooms
• 1/3 cup carrots
• ½ tbsp vegetable oil
• 1 tbsp curry powder
• 1/3 cup mirin or sake
• 2 cups vegan Dashi stock (1 1/2 litre water, 5 dried shiitake, 10g kombu)
• 1 tsp agave
• 11/2 tbsp light soy sauce
• 1 1/2 tbsp potato starch
• 1 tbsp water
• The white part of a green onion
• Vegetable oil
• 1 spring onion chopped
