THAI GREEN CURRY!

Enough chitchat! Here is the recipe!

• Curry paste:
• 1 medium onion or shallot
• 2 green chilies
• 1 TBSP palm sugar or white sugar
• 3 cloves garlic
• 1 thumb size ginger or galangal or both
• 2 lemongrass stalks
• 5 kaffir lime leaves
• bunch of Thai basil (or regular basil)
• coriander roots along with the leaves and stalks
• For the curry:
• 2 cans of coconut milk
• 1 tsp coconut oil
• 1 tsp cumin powder
• 1 tsp coriander powder
• curry paste
• 2 TBSP vegan fish sauce or homemade dashi
• 1 carrot
• 1 can bamboo shoots
• 2 cups braised tofu
• 1 red bell pepper or red chili
• Basil for garnishing
• Salt
