TACOS AL PASTOR AND VEGAN SOUR CREAM!

Best vegan tacos EVER⎜Norwegian twist 🇳🇴⎜TVP

Soy Protein Tacos al pastor⎜Vegan with a Norwegian twist is a new obsession of mine since I have discovered Mas Vegan recipe I have been crazy making this and boy does it taste good and better than that, they are super easy to make! Enjoy!

Enough chitchat! Here is the recipe!

TACOS AL PASTOR AND VEGAN SOUR CREAM!

• 1 1/2 cups of TSP
• 1 small onion, finely chopped
• A bunch of cilantro, minced
• 4 slices of pineapple, chopped
• Tacos tortillas
• Vegan sour cream
• 2 lemons
• 1 tablespoon of vegetable oil
• FOR THE AL PASTOR MARINADE:
• 2 to 3 dried guajillo chilies
• 3 canned roasted red bell peppers (approx 1/2 cup)
• 1/2 onion
• 1 garlic clove
• 1 teaspoon vegetable bouillon
• 1/2 teaspoon of salt
• 1/4 teaspoon black pepper
• 1/2 teaspoon cumin
• 1/2 teaspoon chipotle powder (optional)
• 1/4 teaspoon of powdered cloves
• 1/4 teaspoon cinnamon
• juice of 1 lemon
• 1 tablespoon of orange juice
• 1/4 teaspoon of oregano
• 1/4 cup of water
• VEGAN SOUR CREAM:
• 1 cup of soaked raw cashews
• 1/4 teaspoon of salt
• 1/2 tablespoon of nutritional yeast
• 1/2 cup of water
• juice of 1 lemon

Instructions

  • 1.
    Using a pair of scissors, slice the dried chilies open and remove the seeds and the white membrane then add them to a bowl with water and let them sit there for about 1 hour. Or just simmer the chilies for 6 minutes.
  • 2.
    Add the tsp to a pan with 3 cups of water and let it simmer for 5 to 7 minutes. Drain the TSP, wash it under running water, squeeze the excess water. Reserve.
  • 3.
    Making the marinade: add all the marinade ingredients to a blender and blend until smooth and well combined
  • 4.
    Add the marinade to the TSP and put it in the fridge for at least 2 hours
  • 5.
    Making the vegan sour cream: Soak the cashews in water for about four hours or simmer them in water in low heat for 7 minutes. Add all the remaining ingredients to a blender and blend until very smooth
  • 6.
    Add the oil to a frying pan, add the prepared TSP and saute in medium heat for 5 minutes.
  • 7.
    Assemble the tacos starting with the TSP, then chopped onions, chopped coriander, sour cream and the chopped pineapple.
