STRAWBERRY MOUSSE.

Plant-based protein packed ⎜No bananas needed!

This strawberry mousse is like summer in a bowl! It tastes fresh and looks as pretty as summer can look, plus it is rich in vitamins, and nutrients and packed with protein!

Enough chitchat! Here is the recipe!

STRAWBERRY MOUSSE.

• 2 cups of raw cashews
• 3, 4 cups of water for simmering the cashews
• 2 cups of strawberries, roughly chopped
• 1/2 cup of coconut milk or any other plant-based milk
• 1/4 cup of the sweetener of your choice - I used erythritol
• 1 teaspoon xanthan gum
• 1 1/2 inch worth of cooked beetroot

Instructions

  • 1.
    Add the cashews and the water in a pot, and turn on the heat until it boils, when it does, simmer them for about 5-10 minutes.
  • 2.
    Drain the cashews, add them to a blender along with the remainder of the ingredients, and blend for about 3 minutes.
  • 3.
    Add the strawberry mouse into smaller containers, cover them with plastic film, and put them in the fridge for about 6 hours or overnight.
  • Print
