Nut-free - Gluten-free.

This is my ultimate soft mozzarella cheese⎜nut-free⎜gluten-free because cheese is life and we are always searching for new recipes and new ingredients, right? So here you have an ultimate soft mozzarella cheese, smooth and delicious and also nut-free and gluten-fre, made with a frugal ingredient called cassava, that's super versatile and with an extra stretchy property, extremely cheese-like! Enjoy it!

Enough chitchat! Here is the recipe!

• 1 cup of cooked cassava, drained
• 4 tablespoons of unsweetened plant based milk
• 1/4 cup of vegetable oil
• 1 cup sweet starch
• 1/2 cup sour starch
• 1 teaspoon salt
• The juice of 1/2 lemon
• 1 tablespoon of nutritional yeast
• 1/2 teaspoon turmeric powder

    Blend the cooked cassava, the oil and the milk until smooth. Reserve.
  • 2.
    In a bowl add the remainder of the ingredients and mix well using your hands. When all the ingredients are well incorporated, transfer the cheese to a greased mold, cover with aluminum foil or a cling film and put it in the fridge.

    Although this cheese is raw, it must be consumed grilled or baked on sandwiches or on pizzas and toasts.
