VEGAN PULLED PORK USING BANANA PEEL!

• FOR THE PULLED "PORK" MEAT:
• 1 tablespoon of vegetable oil
• 3 greenish banana peels
• 1/3 cup chopped onions
• 1/3 tsp garlic powder or 2 cloves of garlic
• 1/4 cup barbecue sauce
• 1/4 cup water (if necessary)
• Salt and pepper
• FOR THE SLAW:
• 1 cup julienne cabbage
• 1/3 cup julienne kale
• 1/4 cup julienne onions
• 1/2 cup tofu
• Salt
• 2 TBSP lemon or apple cider vinegar
• Black pepper
• 1/3 cup water

Instructions

    FOR THE PULLED BANANA "PORK":

    Wash thoroughly the bananas on running water
  • 3.
    Peel the bananas and cut the peels lengthwise, forming strings
  • 4.
    Heat 1 tablespoon of oil and add the onions, saute until lightly golden (6-7 minutes), if you're using minced garlic cloves, add and cook for 40 seconds
  • 5.
    Add the banana peels saute for 5 minutes, add water if needed
  • 6.
    Add the garlic powder
  • 7.
    Add the bbq sauce, cook for 1 minute more
  • 8.
    Warm your favorite bread, add the pulled bananas and slaw and enjoy!

    Cannot be frozen.

    FOR THE SLAW:

    Add the tofu, the lemon, the salt, black pepper, and water to a blender, blend until smooth

    Julienne the onions, carrots, cabbage, and kale, add the tofu blend and massage it well so the vegetables break and become softer
