CHORIZO, TOMATOES AND WHITE BEANS STEW!

A winner every time.

This wintery was stew is perfect for those lazy weeknights when you want to enjoy a hearty and nutritious food but don't want to spend time too much time in the kitchen! Hope you guys like it!

Enough chitchat! Here is the recipe!

CHORIZO, TOMATOES AND WHITE BEANS STEW!

• 1 tablespoon of vegetable oil
• 1/2 cup of onions, finely chopped
• 1 cup of homemade tomato sauce
• 1 cup of white beans
• 1 tablespoon of tomato puree
• 3 garlic cloves, minced
• 3 teaspoons of paprika paste or 1 1/2 teaspoon of sweet paprika powder
• 1 teaspoon of mustard
• 1 teaspoon of homemade vegan bouillon
• Salt to taste
• Pepper to taste
• Fresh parsley, chopped
• 1 to 2 homemade chorizos, browned

Instructions

  • 1.
    In a skillet on medium heat, add the oil, when heated, add the onions, sauté for 4 to 5 minutes or until light golden
  • 2.
    Add the garlic, sauté for 40 seconds
  • 3.
    Add the tomato sauce, stir for 1 minute more, add some water if your tomato sauce is too thick
  • 4.
    Add the remainder of the ingredients up until the pepper. Stir and let it cook for about 5 minutes. Add more water if needed.
  • 5.
    Add the fresh parsley, then top it with the braised vegan chorizo. Serve it on top of toasted bread or with some potatoes, rice or noodles.
