Add the potatoes into a pot with water and some salt, turn on the heat, bring the water to a boil and allow the potatoes to cook until soft

Drain and peel the potatoes, then mash them by passing them through a sieve or by using a potato masher. A fork also works

Add salt, black pepper, nutritional yeast and parsley and add the corn starch one tablespoon at a time, until the dough reaches a firm and dry consistency that reminds of Play-Doh, only a little bit softer

Mix everything together, then transfer the dough onto a surface dusted with more cornstarch, and with the help of a rolling pin, stretch the dough into a shape of a 1 cm thick rectangle, then trim the edges of the dough and cut the rectangle into 1 cm ribbons

Do the same with the dough edges you cut before.

Place the ribbons into a dusted plate, separated from each other so they don't stick to each other, If you want your potato sticks to be super crunchy, put them in the freezer for one hour, and then fry them right away right after removing them from the freezer

Now in a pot, add vegetable oil turn, on the heat, and when the when the oil is hot enough carefully place the potato sticks into the oil, move them around so they don’t stick together and allow them to fry until golden brown

Remove the potato sticks from the vegetable oil, placed them separately on a plate lined with paper towel and enjoy

The crispy potato sticks are even better with some dressing or sauce I love them with a good tartar sauce!
