PANCAKES WITH TVP MEAT FILLING!

Super comfort food.

Have you ever had TVP? It stands for textured vegetable protein, and it is made from soy and it so amazing, and I have figured out a way of making it that's mind blowing, since you wont have any of that soy lingering taste in your mouth. This stovetop pie is amazing. Just give it a try and you will be surprised. Comfort and frugal food: the easiest and most delicious pancake with tvp “minced meat” filling ever!

Enough chitchat! Here is the recipe!

PANCAKES WITH TVP MEAT FILLING!

• FOR THE DOUGH:
• 1 cup of water
• 3 cups of all-purpose flour
• Salt to taste
• 1 tablespoon of baking powder
• 1 teaspoon baking soda
• 1/4 teaspoon black pepper
• 4 tablespoons of oil or vegan butter
• 2 tablespoons of ground flaxseeds
• FOR THE MINCED MEAT FILLING:
• Water for frying
• 1 cup of TVP (dry)
• 1/2 cup of sofrito (minced red and green bell pepper and onions)
• 1/4 teaspoon salt
• 1/2 teaspoon curry powder
• 1/3 teaspoon black pepper
• 1/4 cup of tomato juice or tomato passata
• 2 tablespoons of minced green onions
• 1/2 tablespoon lemon juice

Instructions

    FOR THE DOUGH:

    Mix all the ingredients for the dough and let it rest for about 15 minutes. Reserve.

    MINCE TVP MEAT FILLING:

    On medium-low heat, sauté the soffits for 2 to 3 minutes, add the TVP, sauté for 2 minutes more, add the tomato passata little by little, until the top is cooked through, add the remainder of the ingredients, sauté for 3 minutes more, reserve.

    MAKE THE PANCAKES:

    Grease the ring molds. On a skillet in low heat, place the ring mold, then a thin layer of the batter, add the filling, and another thin layer of the batter, let it cook for about 8 to 10 minutes each side, flip the pancakes, remove the ring when ready, grease the ring again, repeat the process until you no longer have any filling and batter left. Serve it immediately with some sriracha sauce and enjoy!
