GLUTEN-FREE BUTTER COOKIES!

Healthy, simple, gluten-free and low-carb butter cookies, anyone? This recipe is one of my all time favorite because it is as satisfying to make - cuz its easy and quick - as it is to love it, cuz its beyond delish!

Enough chitchat! Here is the recipe!

GLUTEN-FREE BUTTER COOKIES!

• FOR THE BUTTER COOKIES:
• 2 cups of tiger nuts - or any other nut flour of your choice
• 3 - 4 tablespoons of vegan butte
• A pinch of salt - optional
• FOR THE EGGWASH REPLACEMENT GLAZE:
• 1/2 tablespoon of vegan mayo
• 1 teaspoon of ketchup
• 2 - 3 tablespoons of soy milk

Instructions

    Add the tiger nuts flor to a bowl along with the vegan butter and the salt (optional), mix with a spoon then proceed to mix it with your hands.
  • 2.
    When the dough resembles wet sand, where it's moist but it holds the shape together, mold it into a ball, put it back in the bowl, and allow it to rest for about 5 minutes so the ingredients are set and incorporated.
  • 3.
    After 5 minutes of resting the dough, form small balls by rolling them between your hands, place them in a greased baking tin, brush them with the mayo/ketchup/soy milk mixture, and bake them in a preheated oven for 10 to 15 minutes at 200°C / 392°F.
