DELICIOUS LOCKDOWN THRIFTY FOOD!

What i eat in a day vegan, wfpb-ish (realistic).

So, during this lockdown, I have decided to try and be healthier than ever by (cuz, I don't want to get too fat ;)) adding to my already fully vegan food some new rules and ditch considerably some ingredients such as oil, refined sugar, white flour, and white rice and try and reduce the amount of oil and substitute it for whole food oils so I have decided to show you guys how my everyday food is! And all of that using simple pantry ingredients! Hope you like it!

Enough chitchat! Here is the recipe!

• BREAKFAST:
• 1/2 cup of old fashion oats
• Any fruit sauce as blueberries, bananas or strawberries
• Any dried fruits such as raisins, goji berry or dates
• Pecans or any nuts I have available
• LUNCH:
• Salad bowl with:
• Whole wheat pasta
• Romaine lettuce
• Red onions
• Chopped apples
• Green beans
• Raw mushrooms
• Sweet corn
• THOUSAND ISLANDS DRESSING:
• 1 tablespoon of oats
• 2 tablespoons of sunflower seeds or raw cashews
• 1/2 tablespoon of raisins
• 2 tablespoons of white vinegar
• 1 teaspoon of lemon juice
• 1/4 teaspoon of smoked paprika
• 1/4 teaspoon black pepper
• 1 tablespoon tomato puree
• 1 tablespoon of pickles
• 1/4 cup unsweetened soy milk
• 1/3 cup of water
• 1 teaspoon onion powder
• 1 teaspoon salt
• 1 teaspoon mustard
• Blend it all together.
• FLUFFY HUMMUS:
• 1 can of cooked chickpeas
• The juice of 1 lemon
• 2 tablespoons tahini
• Salt to taste
• Onion powder to taste
• Garlic powder to taste
• 1 chipotle in adobo (optional)
• Water if needed
• Blend everything for 5 minutes on high speed
• CHICKPEA STEW:
• 1 small onion, chopped
• 1 small tomato, chopped
• Water
• Salt to taste
• Pepper to taste
• 1 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 1 medium-size potato, chopped
• Tomato sauce
• — Optional:
• Paprika
• Oregano
• Lemon juice
• Cumin
• —Or—
• Curry powder
