CRISPY AND SMOOTH GOAT CHEESE FRITTERS.

• 400 g of firm or extra firm tofu
• 1 tablespoon of unsweetened
• Cashew, almond, or soy vegan yogurt
• 1 tablespoon of vegan butter
• 1 tablespoon of nutritional yeast or half an inch's worth of a pickle
• 1/4 teaspoon white pepper
• 1 teaspoon salt
• The juice of half a small lemon
• 1 teaspoon apple cider vinegar
• BATTER:
• 1 cup of all-purpose flour
• 1 cup of unsweetened vegan milk
• 1 teaspoon of salt
• 1/2 teaspoon of black pepper
• 1/2 teaspoon of baking soda
• A few drops of lemon

Instructions

  • 1.
First, press the tofu to remove all the liquids. This step is very important so the cheese will be firm and easy to handle.
  • 2.
Then add it to a mixer or a blender along with vegan yogurt, nutritional yeast, salt, white pepper, vegan butter, lemon juice, and apple cider vinegar, and blend well.
  • 3.
Now, put it in the fridge so later we can make the little bowls with it and they will hold their shape while air frying.
  • 4.
Meanwhile, make the batter by adding all-purpose flour to a deep plate or a bowl, along with unsweetened vegan milk, salt, pepper, baking soda, and a few drops of lemon for extra crispiness, then stir until the batter is smooth and well combined. Please note that you might have to add a little bit more flour to the batter because it is supposed to be a little bit thicker rather than thin. Now that the cheese has firmed up, add breadcrumbs to a plate and scoop out some of the cheese with a spoon, grease your hands, and roll a dollop of cheese between your hands, forming little balls, then roll them in the breadcrumbs, and placed them in a baking sheet.
  • 5.
Now carefully dip each bowl into the batter, and with the help of a fork, allow the excess batter to drop, then roll the cheeseballs in the breadcrumbs again, place them in a previously greased baking tin, and if where you live is too hot, freeze them for 10 minutes before air frying them, this way they will hold their shape while frying or baking.
  • 6.
After this step, preheat the air fryer for 5 minutes, spray it with oil, carefully place each ball inside and fry them at 400°F for about 10 minutes flipping them after five minutes.
  • 7.
Alternatively, you can deep fry them, just be very careful so they do not stick to the bottom of the pan by delicately rolling them once in a while.
  • 8.
When the goat cheese fritters are ready, remove them from the air fryer, place them on a plate, and serve them on their own or accompanied by your favorite dressing or sauce.
  • 9.
NOTE: You can also make them in the oven, by putting them in a baking sheet and baking them for 5- 10 minutes add a 375°F preheated oven.
