MY AMAZING BANANA PEEL CHEESEBURGER PATTIES!

• Peels from 3 large bananas
• 2 or 3 tablespoons of all-purpose flour
• 1 small onion
• 1 tablespoon of chickpea flour
• 1 tablespoon oatmeal
• Pinch of salt
• 1 clove of garlic, minced
• 1/2 tablespoon vegetable oil
• A pinch of Italian herbs
• 1/3 teaspoon of barbecue spice blend
• A pinch of black pepper
• 1/2 teaspoon mushroom powder
• 1 1/2 tablespoons ground flaxseeds and 2 tablespoons of water
• Lettuce or arugula
• Tomatoes
• Onions
• Vegan mayo
• Vegan cheese
• Hamburger bread
• RECIPE FOR THE BBQ SPICE BLEND:
• 2 tablespoons brown sugar
• 2 tablespoons smoked paprika
• 2 teaspoons garlic powder
• 2 teaspoons chili powder
• 1 teaspoon onion powder
• ¼ teaspoon cayenne pepper, optional
• 1 teaspoon pepper

Instructions

  • 1.
    Peel the bananas, scrape the peels white internal part then mince the peels very finely
  • 2.
    Add the oil to a saute pan and when the oil gets hot, add the onions and the banana peels. Stir for 5 minutes. Add the garlic, stir for one minute more. Reserve.
  • 3.
    Make the flax-egg: add the flaxseeds to a small bowl, add the water, stir until combined, reserve.
  • 4.
    When the banana peel mixture has cooled to room temperature, add the flour, the chickpea flour, the mushroom powder, the oatmeal, salt, pepper, Italian herbs, the flax egg, and barbecue spice blend and stir until everything is well combined. If the mixture is too dry, add a bit of water.
  • 5.
    Add a little bit of oil to a frying pan, when the oil is hot, place one spoon of the mixture, shape it into a hamburger patty and fry it in medium heat for 4 minutes each side. Remove from the heat and place them in a paper towel.
  • 6.
    Assemble the hamburgers and enjoy!
